1/2 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon or spicy brown mustard
1 garlic clove, minced
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon kosher salt
A dash of fresh ground Four peppercorn blend
Add all the ingredients to a food processor or dressing decanter; blend or shake together until mixed well.
Pour the dressing over a salad and store the remaining dressing in the refrigerator for up to 3-4 days.
