Ingredients

8 Tbsp. Salted Butter ( 1 stick)

1 cup whole milk

2 Tbsp. High Peaks Seasoning

5 lbs. potatoes, half Yukon Gold, half Russet, peeled and cubed

1 Tbsp. Steakhouse Salt

4 oz. Cream cheese, room temperature
Directions
Add butter to a sauce pan on the stovetop, then melt it over medium heat.
Once melted, add in the milk and the High Peaks Seasoning, mix well and remove as it reaches a simmer. Put a lid on the pan and store it in the refrigerator for four hours or even overnight to bloom the herbs.
Add the potatoes to a stock pot and fill with water until it is a full inch over the top of the potatoes.
Add 1 Tbsp. Steakhouse Salt to the pot, the bring it to a boil over high heat. Boil the potatoes for 15 minutes.
Drain the water from the pot and add the potatoes back into it. Then, using oven mitts, carefully hold the handles of the pot and shake it gently to release excess steam from the potatoes.
Using your preferred method, mash the potatoes to desired consistency, then pour half of the melted butter mix into the pot and fold into the mashed potatoes. Once all the butter mix is absorbed, repeat with the second half. Once done, add in the cream cheese and fold it in as well. Taste, then add salt if desired.
