Ingredients

3 ½ cups flour

2 tsp. baking soda

1 tsp. baking powder

1 Tbsp. OTSS pumpkin pie spice

½ tsp. salt

2 cups canned pumpkin

½ cup oil
-
¾ cup sugar
-
¼ cup maple syrup

3 eggs
-
3 Tbsp. milk or canned coconut milk

⅓ stick unsalted butter
-
2 cups powdered sugar
-
1 ½ tsp. vanilla extract
-
1-3 Tbsp. water

1 Tbsp. maple syrup

Garnish with OTSS Pumpkin Spice Sugar
Maple Glaze:
Directions
Preheat the oven to 350°F.Mix the dry ingredients, flour, baking soda, baking powder and pumpkin pie spice. In a separate bowl mix the wet ingredients, pumpkin, oil, maple syrup, milk and eggs.
Combine the dry and wet ingredients in a large mixing bowl, stirring until just combined. In a slightly greased silicone or traditional greased muffin tin, fill each muffin tin almost to the top with a scoop of batter.
Bake for 20 minutes or until the tops are puffy and spring back when you press them. Remove from the muffin pan and let cool before glazing.
For the glaze, melt butter in a saucepan. Add powdered sugar and vanilla - it should be thick and sticky. Stir in maple syrup, add in water until you reach desired consistency.
Dip the muffins in the glaze and sprinkle the tops with pumpkin spice sugar or maple sugar.
