1 ¾ cups all-purpose flour

¾ cup packed brown sugar

½ tsp Kosher salt

2 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground cloves

¼ tsp ground ginger

1 ½ cups mashed bananas (3-4 over-ripe bananas)

½ cup oil or melted unsalted butter

2 large eggs
-
1 Tbsp. OTSS Pure Madagascar vanilla extract
Directions
Instructions:
Preheat oven to 350° and grease a loaf pan.
Whisk together flour, brown sugar, baking powder, salt and spices in a large bowl until combined well.
In a separate bowl, peel and mash bananas. Whisk in the eggs, vanilla extract, and oil or butter.
Pour wet ingredients into dry ingredients and stir without over-mixing the batter.
Pour mixture into greased loaf pan.
Bake for 55-65 minutes or until you can stick in a toothpick that comes out clean.
Once fully baked, carefully remove the loaf from the pan and place on a cooling rack.
