This slow cooker Colorado chili is a perfect blend of rich, savory flavors and a hint of spice. Enjoy it with a side of warm tortillas, crusty bread, or your favorite toppings like shredded cheese or sour cream.
Ingredients

1.5 lbs. ground beef, chuck, turkey, or plant-based meat sub

1 15 oz. can pinto beans

1 15 oz. can light red kidney beans

1 15 oz. can Ranch Style Beans with jalapenos

1 15 oz. can No Salt Added Original Rotel Diced Tomatoes

1 4 oz. can diced green chiles

1 large yellow onion, chopped

1 cup lager beer or water
-
2-3 garlic cloves, minced

1 ½ Tbsp. OTSS Chili Blend Powder (add more to taste)

½ tsp. OTSS Ground Devil’s Backbone

Kosher salt to taste

Black pepper to taste
Directions
Heat a large skillet over medium-high heat with a drizzle of olive oil.
Add meat and onion, season with salt and pepper, and cook for 4-5 minutes until meat is almost browned all over.
Drain fat and add onion in large slow cooker.
Combine beef, onion, beans, tomatoes, green chiles, spices and seasonings, and beer or water.
Transfer to slow cooker. Season with salt and pepper to taste. Cook on high for 3-5 hours or low for 6-8 hours.
Spoon into bowls and garnish with shredded cheese, chopped onion, green onion, a dollop of sour cream, or any topping of choice.
Serve with cornbread, warm tortillas, or your favorite baked bread.
