Ingredients

¾ cup all-vegetable shortening

1 cup brown sugar

1 egg

¼ cup molasses

2 ¼ cups all-purpose flour

¼ tsp. salt

2 tsp. baking soda

3 tsp. OTSS Pumpkin Pie Spice

¼ cup vanilla bean sugar, for rolling

Crystallized ginger for top of cookie
Directions
Cream shortening and brown sugar together in mixer.
Mix in eggs and molasses until well-combined.
Stir dry ingredients in a separate bowl and then add slowly to mixer on low speed until thick dough forms.
Wrap dough in plastic and chill in refrigerator for about an hour.
Shape heaping tsp. scoops into balls, roll balls in sugar and places on an ungreased baking sheet.
Flatten each ball slightly and top with a small piece of the ginger.
Bake at 350° for 7-9 minutes.
