Cube 3 lb of meat (2.5 lb ground pork shoulder or butt plus 0.5 lb beef or pork fat) and cool in the freezer for 20 minutes. Grind with 1/4" die, blend in 2 oz Burlington Bratwurst seasoning and 1/2 cup of milk and process in a food processor until smooth. Make into links or patties.
